I want an old Land Rover. Well, any Land Or Range Rover, I just imagine that I want something with less goodies would be less awful (i.e. I have one car with annual air suspension replacements, I could do without another).
For reference, I have an XJ8, so I’m somewhat comfortable with the idea of a car where routine maintenance is more than changing the oil.
What should I look for beyond your average HSE trade-in special?

how old is old?
An old series LR can be had for reasonable money in running condition. A mid 90s 110 can be found restored completely for out the ass kind of money

Depends on what you want to use it for. If you ever want to drive real distances, a Series is less ideal, because >5.2:1 final drive and small heavy low-compression four banger. Also rattles. You get around that with a Ninety or One Ten (80s), a stage 1 (early 80s), or a Defender (90s). Some unreliability in the 3.5s in the early ones, but they can do all right if looked after and are less likely to have regularly scheduled head gasket jobs. If you get an early one as an import that’s not as fancy, cost isn’t as murderous, but it pretty much can’t have a diesel swap because stupid import limits and paranoia.

Like Ramblin said, it really depends on what you’re looking for. A well maintained RRC with the air suspension pulled out shouldn’t give you any problems, but they’re starting to get a little pricy. If you want a series, you’re looking at around $15k for a good runner.
If you’re on FB, there are a few for sale in this group (all local Rover enthusiasts):

“I want an old Land Rover. Well, any Land Or Range Rover”
An old Series 1/2/3 4 cyl Land Rover is a completely different experience compared to a V8 Range Rover. And the 90/110/Defender is a lot like the old Series 1/2/3, but modernized, with much more power.
So before looking for anything, you have to decide what you want. Do you want the “original Landrover” post-WW2 off road military vehicle experience? Or do you want the luxury offroad vehicle experience?

This is second hand experience mind you, but someone I know (not really that well) imported a 80s defender for a claimed $15,000 (think he said the truck was 12,500, plus two grand import)from england. A nice ass one too, here is a pic from a car show.
short wheelbase with rear safari seats. Believe it was a four cylinder diesel.
Suffice to say I was a little jealous.

I’ll throw in my $.02. I bought a 1992 Range Rover County in January of this year (I’m in the states, not sure where you are). I paid $2,200 for a relatively rust free example (minimal holes in the floor). I recently got done doing the head gaskets on it (3.9 V8) which I see as a sort of Land Rover rite of passage. I have cursed the thing a great many times in the last 11 months, but have not regretted it. I would not advise owning one as your sole form of transportation. It is a beautiful car and one of my bucket list dream cars, which is why I bought it. Driving it is unlike anything else. You have a completely uninhibited view of the road, the greenhouse is massive. It floats like a magic carpet even on heavy duty springs. You get the sensation that you can simply drive over any obstacle that is put in front of you. It gets looks and compliments all the time. I’ve met neighbors who have stoped to talk while I have my head burried under the hood. You will improve your mechanical abilities almost instantly. There’s a huge community of online support to help you as well.
